I'll try.

Roleplaying can be boiled down to playing pretend, just like when you were a little kid. It's a bit more structured, but it's really that simple, you pretend to be another person (or creature) in a story you make up with other people.

It can get slightly more complicated than that as we start layering on fiction, writing style and any number of details, but it always comes back to "it would be fun to be......" fill in the blank.
