In fact, I do. It's pretty easy but it takes a couple of days to ferment. This recipe makes a bunch of batter too.

Sorry, Imperial volume measurements. You Euros with your scientifically based measurements....

3 cups uncooked rice (any kind, basmati, jasmine, I think black Japonica is especially good)

1 cup Urad Dal (again, red lentils, moong dal, quinoa - almost anything with a plant protein)

1 tablespoon fenugreek seed (methi for those of you shopping in India or Asian groceries)

Mix it together and wash with cold water by filling the bowl, stirring well with your fingers. Repeat three or four times.

Add about 8 cups of water and 1 tablespoon of salt (preferably without iodine but it's not worth buying extra salt)

Cover loosely with a plate or something and let it sit for at least 2 days. Once it's fermented and smells a bit like sourdough, strain the mixture but reserve the liquid. Grind the rice/dal in small batches in a food processor or blender until smooth. Add liquid back until it's about the consistency of heavy cream, maybe a little thicker, crepe or waffle batter are a good reference.

Ladle into a medium hot pan oiled with ghee or vegetable oil (I use avocado oil) and spread with the back of the ladle until fairly thin and smooth - go ahead and let the spiral pattern show though - but that's completely aesthetic - fry until crisp and flip.

Stuff with almost anything, but masala potatoes, left over Indian takeaway or freshly sauteed vegetables are all good options.
